Couldnt agree more with the concept of educating our nation. There are definitely not enough easily accessible programmes or initiatives in place in our communities for educating people (all ages) abour basic concepts of health, fitness, and nutrition.

Pistachio Balsamic Salad

This crispy salad is simply made and so delicious. Wash and spin your favorite greens, chop some tomatoes and carrots or any other crispy veggies you have on hand. Toast some raw pistachios for a minute in a dry pan. Combine 1 tblsp olive oil and 2 tblsp balsamic vinegar for the dressing. Garnish with freshly grated parmesan cheese. Yummy!
